In the cellar, technology embraces tradition


The cellar walls are made of concrete, enclosing a thick layer of stone wool. The same outstanding natural, insulating material is used in “rafter sandwich roof panels” supporting the Roman tiles. The tubular framework is inspired by the Polonceau model, widely used in the XIXth century for the building of railway stations.

Thus, either in the cellar or in the bottle storehouse, the objective of a stable temperature throughout the year, which is favourable to wine maturing and ageing, has been achieved. A reversible cooling unit with centralized checking of temperatures ensures the maintenance of optimum conditions, vat by vat, throughout the whole fermentation process.

The vat house entirely made of stainless steel is equipped with superposed compartments facilitating gravity delestage operations. Those, completed by pigeages carried out with passion, build the character of our wines, allowing powerful aromatic extractions.

Highly matured

The wines are strictly checked and monitored by our oenologist, the only Master on the cellar, responsible for the quality and excellence of the blending carried out. Our commitment: reduce to a minimum the use of sulphite, focusing on the sanitary state of the crop, on hygiene in the cellar and in inerting.

During the maturating process, the wines are preserved under an atmosphere of protective nitrogen, preventing any physicochemical alteration or bacterial development. This inerting is maintained until final conditioning when the natural cork stopper becomes the ultimate guardian in charge of preserving the precious nectar developed in the cellar, while providing the minimum amount of oxygen required for the ageing of wines.
